Mushroom Soup Recipe

When it comes to feeding our family there is nothing better than simple, delicious, and healthy.  This winter season enjoy a delicious mushroom soup prepared with healthy ingredients and ideal to warm up in the cold temperatures.

This rich mushroom soup contains no dairy or saturated fat, and can be eaten hot or cold; either way is delicious.  The main ingredient is mushrooms that are very versatile, as it can be consumed preferably raw if they are organic.  Consuming fungi brings great benefits to our diet and provides nutrients to our body benefiting our immune system.  Mushrooms are rich in fiber, and have a lot of water in addition to being low in calories.

Ingredients:

  • 1/2 pound mushrooms.
  • 1 cup of soy milk or almond.
  • 3 cups vegetable broth.
  • 1/2 cup of olive oil.
  • 1/2 cup chopped onion.
  • 3 garlic cloves, minced.
  • Pepper to taste.
  • Himalayan pink salt.

Preparation:

In a skillet over medium heat add the oil, onion, garlic and finally the mushrooms; all finely chopped.  Season the mixture with salt and pepper.  Fry for a few minutes while the mushrooms cook completely.  Then, add the broth and milk leaving to boil for a few minutes, and combine all the ingredients in a blender until a uniform texture is achieve.  Finally, add the mixture in a saucepan over low heat to a boil and remove from heat.  Only add a little olive oil and ready!

Serves: 4 people
