This delicious Pasta with Pesto recipe contains Tomatoes as one of the main ingredients which has an abundant source of antioxidants; because, it contains lycopene. A very effective antioxidant against cancer, in addition to lowering cholesterol, it provides hydration to the skin.  Also, Spinach which contains iron, folic acid, fiber and vegetable protein, and red pepper that helps to eliminate toxins from the body.

Ingredients:

  • 1 pound penne pasta (organic)
  • 1/2 cup tomato pesto
  • 1 cup fresh spinach
  • 1 red bell pepper, cut into strips
  • 1/2 pound red grape tomatoes
  • Himalayan pink salt to taste

Preparation:

Put enough water to boil with 1 tablespoon salt, let cook the pasta until al dente. When the pasta is ready, drain and put it in a bowl. Mix with pesto, vegetables, and add a little salt to taste. We serve and ready.

Serves: 4 people
