Oatmeal and Blackberry Pancakes

Healthy and delicious are the right words to describe these oatmeal and blackberry pancakes.  Pancakes are generally not the most healthy breakfast foods, but this pancake recipe is meant to be indulge guilty-free.

A very easy way to make a healthier version of traditional pancakes,  adding ingredients with high nutritional content like oats, which contains fiber that helps sweep fat deposits accumulated on the walls of the arteries.  It also helps control sugar levels in the blood, and improves digestion.  It contains super-foods like chia seeds with lots of omega 3 and protein for a healthy heart.  The flaxseed is a great source of vitamins C and E, and antioxidants ideal to fight free radicals.

Ingredients:

  • 2 cups of organic almond milk.
  • 2 cups of organic gluten-free flour.
  • 1 cup of organic gluten-free oats (grind in a food processor).
  • 1/4 cup of organic ground flaxseed.
  • 1/4 cup organic chia seeds.
  • 1 organic egg.
  • 1/2 cup organic blackberries.
  • Organic coconut oil (cold pressed).
  • Strawberries necessary.
  • Agave syrup.

Preparation:

Stir all ingredients with a mixer or with a whisk (except the strawberries and agave syrup).  Putting the skillet to a medium-high heat.  When hot enough add a little coconut oil, then add the required amount of the mixture for pancakes depending on the size of the pancakes you want to prepare.  Continue turning as both sides are golden brown and puffed, and voila!  Very easy, delicious and healthy!  Serve with strawberries, blackberries and agave syrup.

Yield: 10 pancakes
