Vegan Berry Cheesecake

This delicious Vegan Berry Cheesecake is an excellent and healthy dessert alternative.  Gluten-free, dairy-free, no refined sugars nor saturated fats make this cake a great option for your sweet tooth.

This cheesecake with red berries is full of antioxidants, and it is the perfect way to consume good quality carbohydrates.  It will give you energy as well as nourish your body with healthy fats such as coconut oil.  Another essential ingredient to prepare this dessert is the walnut of India.  This nut has a high fiber content, monounsaturated fats that are ideal for the heart.  Also, it contains magnesium that helps regulate blood sugar levels, and it’s rich on antioxidants and iron.  This dessert is high in vegetable protein which is ideal before or after practicing any physical activity.

Ingredients for the crust:

  • 1 cup of organic dates (no seed).
  • 1 cup of coconut flour.
  • Water as needed.
  • 1/2 cup dehydrated coconut.
  • 1 tablespoon vanilla extract.
Ingredients for the filling:
  • 2 cups of organic Indian walnut. (It is very important to soak the nuts in water for about 8 hours).
  • 1 cup of red fruits.
  • 1 pack of 16 oz organic silken tofu.
  • 1 tablespoon melted coconut oil.
  • 1 tablespoon of coconut butter.
  • 1/2 cup of organic coconut honey (agave, maple).
  • 1 tablespoon vanilla extract.
  • 1 tablespoon vanilla flavored vegetable protein (optional)

Preparation for the crust:

Mix all the ingredients in a processor until obtaining a mixture with a consistency as of a compact and smooth mass.

Preparation for the filling:

In a removable mold put the base covering the bottom of the mold with a rather thick layer.  Once you remove the water from the nuts, put all the filling ingredients in a blender except the red berries.  Do not forget to remove all the liquid (whey) from the tofu very carefully after blending all the ingredients.  Finally, you add the red fruits and blend all together.  When the mixture is ready we pour it into the mold, cover it and put the cheesecake in the freezer for about 8 hours.  Leave it for 15 minutes outside the freezer to cut it and enjoy this delight.
Tip:
  • The easy way to unmold the cheesecake is when it’s cold.
