When it comes to feeding our family there is nothing better than simple, delicious, and healthy. This winter season enjoy a delicious mushroom soup prepared with healthy ingredients and ideal to warm up in the cold temperatures.
This rich mushroom soup contains no dairy or saturated fat, and can be eaten hot or cold; either way is delicious. The main ingredient is mushrooms that are very versatile, as it can be consumed preferably raw if they are organic. Consuming fungi brings great benefits to our diet and provides nutrients to our body benefiting our immune system. Mushrooms are rich in fiber, and have a lot of water in addition to being low in calories.
Cuando hablamos de la alimentación de nuestra familia no hay nada mejor que lo simple, delicioso y saludable. Esta riquísima sopa de champiñones no contiene lácteos ni grasas saturadas, y se puede consumir fría o caliente; de cualquier manera es deliciosa. El ingrediente principal son los hongos que son muy versátiles, ya que se pueden consumir crudos de preferencia si son orgánicos. El consumir champiñones/hongos trae grandes beneficios a nuestra dieta y aporta nutrientes a nuestro cuerpo beneficiando a nuestra salud. Son ricos en fibra, poseen una gran cantidad de agua, y además de ser bajos en calorías.
Ingredients:
- 1/2 pound mushrooms.
- 1 cup of soy milk or almond.
- 3 cups vegetable broth.
- 1/2 cup of olive oil.
- 1/2 cup chopped onion.
- 3 garlic cloves, minced.
- Pepper to taste.
- Himalayan pink salt.
Preparation:
In a skillet over medium heat add the oil, onion, garlic and finally the mushrooms; all finely chopped. Season the mixture with salt and pepper. Fry for a few minutes while the mushrooms cook completely. Then, add the broth and milk leaving to boil for a few minutes, and combine all the ingredients in a blender until a uniform texture is achieve. Finally, add the mixture in a saucepan over low heat to a boil and remove from heat. Only add a little olive oil and ready!

Ingredientes:
- 1/2 libra de champiñones (hongos).
- 1 taza de leche de soya o de almendras.
- 3 tazas de caldo de vegetales.
- 1/2 aceite de olivo.
- 1/2 cebolla finamente picada.
- 3 dientes de ajo finamente picados.
- Pimienta al gusto.
- Sal rosa de Himalaya.
Preparación:
En un sartén a fuego medio agregamos el aceite, la cebolla, ajo y finalmente los hongos; todo finamente picados. Sazonamos la mezcla con sal y pimienta. Sofreímos por unos minutos sin dejar cocinar por completo los hongos. Luego agregamos el consome y la leche dejándolos hervir por unos cuantos minutos, y vertimos todo el preparado en una licuadora. Licuamos muy bien todo el preparado. Finalmente agregamos la mezcla en una olla a fuego lento y al primer hervor retiramos del fuego (la consistencia no tiene que ser ni muy líquida, ni muy espesa). Sólo le agregas un poco de aceite de olivo y listo!
