This Quinoa Salad contains antioxidants that are good for your health. You can use it as a substitute for rice, pasta or wheat.  Quinoa is very versatile and easy to prepare which is also delicious.

Quinoa is more than a complete cereal packed with nutrients, it is a super food. In his extensive nutritional contribution to our diet, it is considered a grain that contains lots of fiber, high in protein as it contains a complete 9 essential amino acids.  Not to mention, it is gluten free. Furthermore, this grain contains manganese, magnesium, iron and phosphorus.  Since Quinoa is an excellent controller of diabetes, it is recommended to consume if you want to replace animal protein.  Quinoa can also ease your digestion, since a single serving of this food contains 20% of the fiber you need each day, and causes a rapid feeling of fullness so it would help you eat less during the day.

Ingredients:

  • 1 cup cooked quinoa previously.
  • Mixed green lettuce, arugula, spinach, lettuce home.
  • 1/2 pound asparagus.
  • 1 yellow pepper, cut into thin strips.
  • 1 cucumber skin thinly sliced.
  • 1 cup steamed broccoli.
  • 1 avocado.
  • Lemon juice.
  • Extra virgin olive oil.
  • Himalaya salt.

Preparation:

Cook quinoa using 1 quinoa cup every two cups of water with a little salt or vegetable bouillon.  In a skillet or hot grill with a little olive oil,  add the espárragos with Himalayan salt and a little garlic powder.  Mix all ingredients : lettuce, quinoa, raw vegetables and cooked vegetables.  Add lemon juice, olive oil, Himalayan salt, and avocado.
